    btw, snapper was fantastic. Should have tried a higher temperature & shorther time though (my oven is not working very well).

    The cookery book I use is the standard text for students of the hospitality industry. ie, "Cookery for the hospitality industry by Graham Dodgshun." The book is the Australian standard reference for commercial cookery students.
