Scrimps with chilli sauce
In a medium saucepan fry the following in a little oil or butter until starting to brown:
2 finely diced shallots
half dozen cloves crushed garlic
Add the following:
2 cups scrimp or crayfish stock
2 tablespoon scrimp paste
2 tablespoon tomato paste
1 tablespoon total of creole jerk and / or sambal paste
1 desert spoon spice mix
1 desert fresh coriander
A few splashes soy sauce
A few splashes rice wine
A few splashes Worcestershire sauce
On a tray barbecue 500 to 750 gm smallish raw shelled scrimps in the charcoal webber, with the lid on
No need to turn
¾ cook only as they will continue to cook
Serve with sauce
