carolina pork ribs
make spice paste by pulsing in the food processor:
2 cups water
2 cups onions
2 cups carrots
2 cups celery
1/2 cup cider vinegar or orange juice and a little zest
1/4 to 1/2 cup american ballpark mustard or chili sauce
1/4 cup brown honey or maple syrup
1/4 cup light soy sauce
1/4 cup rum
1/8 cup papika
1/8 cup tomato paste
2 splash of liquid smoke
place in a roasting dish with 3 or 4 kg of pork ribs
slow roast at 125 degrees for 1.5 hours or more
then barbecue on the charcoal webbber until brown
use the liquid as a sauce
