Crispy beef chicken fish pork or scrimp
½ kg of stir fry beef chicken fish pork or small raw scrimps basted with the following
Sauce made by mixing ‘some’ of the following:
juice of one or two oranges and a little zest
1/3 cup sweet chili sauce or 1 tablespoon of chili paste
¼ diced onion
2 tablespoons light soy sauce
1 tablespoons of minced ginger
1 tablespoon of minced garlic
1 tablespoon of sake
1 tablespoon of mirin
A few splashes of liquid smoke
A shake or two of pepper
encrusted with rice flour or tempora mix
Deep fry in 5 mm of oil until crisp
Remove for a few minutes and refry
For a dipping sauce, add a little water to the basting sauce and in a saucepan bring to a simmer
