Beef filled roll with jus dipping sauce
In a medium pot simmer the following for ten minutes:
3 cups water
1 medium diced onion
1 medium diced carrot
1 stalk celery
1 sprigs thyme
1 bay leaf
2 pieces parsley
3 crushed peppercorns
2 splashes of light soy sauce
Stain out solids
In a fresh pot simmer the following for a few minutes:
2 cups of the vegetable stock
2 cups of beef stock
1 or 2 tablespoon beef fat
2 splashes of liquid smoke
A splash of brandy
A squeeze orange juice
Thicken slightly with a little corn flour
Serve with four bread filled rare shaved beef and salad
